The best way with crocodile is to rub it with sea salt and macerate it in lime juice/crushed ginger/garlic/soy/ overnight.
I've done croc sushi style and also BBQ, it's a very versatile meat. The trick is in the preparation, always marinade or macerate it. Here's an easy croc recipe. Cut it into portions as you would cut up a good sized fish. STEAM it.
Heat up olive oil to smoking hot and throw in a handful of finely chopped shallots, small chillies to taste, loads of garlic and the marinade. Arrange the steamed croc on a plate and pour this over. Delicious and easy.
