When the Thais dry the 'prik chee faa' do they just lay them out in the sun or do they slit them remove a few seeds and let the moisture out?
I need to dry some so I can make nam prik pao, cant seem to find them dried.
Anyone?

My missus just used to bung them (the small Prik Kee Noo) on foil/paper/a tray in the sun or on top of the small oven thingy if I was doing a roast dinner.
On a hot day it would take half a day before they were done.

No need to dry the chillies to make NPP. Lots of recipes start with fresh and then toast some of them (leaving the others fresh). The toasting is an important part of the recipe, to give the roasted (pao) taste.
Amazed you can't find dried, though. Every supermarket should have them.

Zen is located in the UK, which probably explains his difficulty in locating dried chillies.

Well putting them out in the sun to dry out ain't going to work for him either...you need more than 2 days of sun a year to dry chilli
