Ive heard fried its not bad. Many years ago when I was living in Perth I was cooking breakfast one morning and found we had run out of bacon. There was a bit of that Devon sausage in the fridge so I thought I would fry a bit of that up. Put it in the pan and when I came back to check on it there was a pool of this disgusting looking liquid where the sausage had been. Never ate it again after that !

I live in a good area for sausages, we have the northern sausage CM is famous for, and there are some very good locally made English style sausages as well.
I had never heard of a Cumberland snag until I came to Thailand, buy them all the time now. Also the Vietnamese restaurant on the Ping River, across from the main part of the city, between Nawarat Bridge and Sapan Lek, makes really good pork sausages.
I was in a second hand place the other day and I saw some hand operated meat grinders, thought it would be great fun making your own snags.

Dice equal amounts of belly pork and shoulder. Freeze for 20/30 minute. Put in mixer, and a quick whizz. Salt and black pepper and a little water. Husk or bread crumb, mix up and mix. Place in bag with a a tube you can put the casing over. Adjust recipe as necessary. I tried with minced pork and crumb, but too wet I think. Cook slowly.
