I freaking love gyoza and dumplings in general.
I like eating gyoza with sour cream and soy sauce since a Russian friend introduced me to this way of eating them.
What's your favourite dipping sauce for these?

soy sauce,fish sauce and smoked chili paste mixed together 1:1:1

Smoked chilli paste you say. I'll have to find some of that.
Another nice sauce I've found is called Cholula sauce. Spicy but not to spicy. Apparently it's Mexican but works on dumplings.

Mix together one part Kikoman soy sauce, one part your favourite fish sauce and then squeeze in a 2 inch strip(like toothpaste) of green wasabe. Give a stir...dip & munch. Cleans the sinuses in a flash & tastes really good.

Catsup & Wasabi is a great quick dipping sauce....Chinese mustard also if you can find it instead of Wasabi
