But my kids spilt beer on that computer and it's now gathering dust under the bed. But the reminders kept coming, FREE upgrade to Windows 10. After 6 months, I clicked yes, and sorry that I did. The thing runs slower now and does less then I want (user functionality reduced) but, according to the article, more that Microsoft wants. Seriously considering going back to 8.1 ... but just wondering ... will they leave a sneaky sub-program which leaves all their data collecting at W10 levels and just make the computer run as if it was W8.1?

You had one month to return to 8.1. You did not so you cannot return now without buying a new copy. As you cannot you are stuck.
