The problem here is speck need to be cold smoked around 18 C though difficult to do it here... If it has to be cold smoked at that temperature I have to wait until December/January before I can make it as it doesn't get that cold here most of the year. You can- just buy an old big fridge and place the smoking unit apart from it and connect them via a hose.tricky but doable...

I followed the contact stuff on BM foods about sausage skins and wood chips for smoking and spoke to 3 differnt Thai ladies, none of whom spoke that much English and eventually I sent an email to order@bmfoods.com. When I will get a reply I am not sure. She did ask me if I lived in BKK, Pattaya or Hua Hin and seemed to have no idea where Khampaeng Phet is. Hey, just wait and see. Enjoy life while you can. It's the only one you will get.
