Wife is using my slow cooker. Never has she done that, Thai way stir fry or boil. Needed to help out on the discovery. Trying to make my Italian based whatever, it has no name. Threw in some spices, waiting for the result. Good on her, watching me prepare food and learning.

I've had one for years. There's nothing like them for cooking stews and casseroles. Unless you are prepared to pay top dollar beef in Thailand is generally of very poor quality. 24hrs in the slow cooker should make even the toughest Thai beef edible.

The idea that youu should turn the heat down once the cooker is at pressurre to just let a little steam out is totally foreign. Unless the steam is blasting out full the food will not be cooked.

Tough meat is made ultra tender by covering with very thin slices of kiwi fruit or a thin smear of mashed ripe papaya. Some fruits contain the enzyme that breaks down the protein molecules. Pineapple juice is another good one.
Slow cookers are great, toss everything in at 10.00am, ready to eat at 6.00pm. Delicious ! I taught my wife how to use one when she spent 3 months with me when I was working in Australia in 2014. She thought it was great but kept lifting the lid to check on it.

Just ate it, unbelievable, yep my spices, but I can taste she threw in two eggs, something I would never have thought of doing. Recipe? Who knows.

Don't talk to me about eggs ! I can't stand the rotten things, have not been able to eat the horrid stuff they call food for nearly 40 years and the bloody Thais put it in everything. About a week ago we had something to eat at a coffee place in the Big C shopping centre at Hang Dong and I ordered a Ceasar Salad and it had chopped up boiled egg all over it. I could not believe it, on a bloody Ceasar Salad. (I Googled the recipe for it and it actually listed egg as one of the ingredients, raw egg in the dressing, and yet that is the first time in my life I have ever seen one with actual egg on it)

Basic Thai cooking, fat preferably old and brown. Add whatever throw in, add chili so no one can taste anything, spoons of sugar, stir.

When my wife cooks for me there is no sugar or msg, little salt or fish oil, just food. She cannot understand how I can eat it. I like to taste the actual food, not just all the other crap they put in it. Don't eat out that much these days.

Dear Mick, just woke up to find a mug of Thai tea an an egg sandwich, all gooey with yellow yoke dripping out on my bedside table. Delicious.

Even better - Soldiers. Hot buttered toast in thin strips, a couple of lightly boiled eggs with the tops knocked off, a couple of drops of Maggi seasoning, soldier plunged deep into the yolk - taste buds delight.

Coke cola works as well, as does milk Pressure cookers work great too. As long as you can convince She Who Cooks to turn the thing down instead of insisting on it blasting steam out all the time as otherwise it is not hot enough.
