This is how I cook it. Crackle is perfect and duck fat roast potatoes are not healthy probably, but also delicious. Pork leg , no bone, cooked for approx 8 to 10 beers.  |

The secret to crackle over charcoal is pick a red hot coal up and hold it against the skin. No ash .
