Start withe charcoal. Roasting on a small spit. I'm pretty good at doing this. Plenty of practice. To get the crackling , on this little machine I just turn the motor off while its on the skin side facing the charcoal. Depending on the amount of fat under the skin , that decides on how good the crackle is. Usually around an inch thick of juicy crackle I get.

Once its cooked , I have a large container thats like a thermos with a lid.
Cut the pork up , put it in the container, and squeeze a whole lemons juice in.
Put the lid on and let it sit for about 10 minutes.
Perfect!

Here's a better pic of the little spit contraption. Can you buy them in Thailand? Surely you can. Not expensive. In Australia they're maybe 70 or 80 dollars and worth every cent imo.

I'll get the pic shortly. They're still cooking in the oven. Roast potatoes , but roasted in duck fat. Heart twitching stuff but they are good.

Peel and half potatoes.
Par boil.
Drain an place into baking tray.
Add about 3 or 4 tablespoons of duck fat.
Roast at 175degrees.
Then once soft , and cooking , turn over , get a potato masher and flatten them just a bit. Keep roasting till done.
Delicious!
