For tbv, there is no Thai word that ends with a final consonant L, hence why its pronounced with an N, read up on Thai final consonats, same same, a B becomes a P, a D becoames a T.
Football, becomes footbon, bill becomes bin.

And why are they essentially saying the same word twice?

^^^^, will keep it short and simple, in normal thai langauge, its subject+verb+noun, in informal speach, verb + noun will do.
In your case of check bin, check is the verb, bin is the noun.
There are various ways to speak the same message, all to do with context.
จ่ายบิล jay bin, you will see it written in many places, can pay your bills here, I go into 7 I give the girl the elecrtic bill, I tell her, jai bin, we both know what it means.
เช็คบิลล์ , is known as Thinglish, a leftover from the GI Joes, and the American way of speaking, after eating in a resto, can I have the check please, we Brits would say can I have the bill please. Loan words, Thai language is littered with them.
เก็บตังค์ kep tang, literal translation, collect the money, some see see it as outdated.
คิดตังค์ kit tang, same as above, but again context, I go to 7, i have a basket with about 3 or 4 or 5 things in it, I tell the girl, kit tang, meaning calculate how much, I wouldnt use the term, check bin.
No offence to you or your mrs, up her way, they usually speak another language, Lao or Khmen before going to school to be taught, how to speak read and write central thai, the problem with that is, rote learning, they can speak it, but they cant explain it to you.

Come here, get to thai school and take your time, litten lek from nakorn nowhere are ten a penny all over thailand, the only ones who hate you speaking thai are bargirls, who the eff would ever consider marrying a bargirl is beyond my comprehension, its not their profession that bothers me, its the baggage they bring with them, eff me if they were so desirable, why hasnt a Thai man grabbed them?

That part you said about not being able to explain things def makes sense. One if my huge problems actually is, I will learn something from her (just off the cuff not sitting down and studying or anything) and find out it is wrong later (or at least i thought it was, but way too difficult to find out with clarity if wrong or not... yet another problem). After a couple of those, i am saying to myself, man ok so I will head to the books.
That is the first point in answering you second question about why no Thai, at least for me. Number two is, how can I put it... there is a kid waking up tomorrow at 7am to go to school to stick his head in a book and learn English. Don't sound fun to me. I am a special case though where I put a good two or three years in full time learning spanish in my 30's. Somehow I was able to actually get interested in it. Never progressed anywhere near as far as I would have liked. But, the worst part for me in that context was I ended up here (starting over). Oh man i was over Spanish in many respects at that point in my life. I had a very good base and would have done well if I lived in a Latin country, but coming here and settling down and looking at the alphabet, and I will freely admit, it does not happen often but I was <duck>ing done. I was already completely unsatisfied with my return on what I had put in with Spanish. That was sort of where my mind was at when I arrived here, and you know what they say about momentum. That is my answer anyway.
I know how it will go for me. I will get out of this stage i am in now of almost purposefully not learning ANY Thai (the why to that question i think is the more interesting one, no idea here), and pick up a bit as i go, never being able to read of course but being able to say all the stuff I need to.

Half the time, and I not blaming the Thais, its just they lack the English grammar to explain it to you. Second point, its all to do with context and situation. You are saying the exact same thing but the situation is different, so different language has to be used. Third point, that kid was me, going to learn Thai, these days with utube videos, mobile phone app etc the world of learning has changed. Good, thats one way of learning,pick up what you need to know. I am far from fluent, there are whole swathes of the language I have never bothered to learn. Thats where I am at now, and at this point in time, I cant be assed to learn any more language I will never use. My reasons for learning was all about, frustration, it takes dedication, repeat repeat repeat, learn speach patterns, once you get to a certain level you start to understand whats being said around you, even if you dont understand 100%. Heck, at times even the Thais cant understand each other, they talk about tones, theres no way a high pitched girl from the north is pronouncing the word the same way a deep voiced man from the south is. I was sat the other night, one guy from the south, two from the north and one from isaan, they didnt know what the word for a bed was, with regards to old fashioned thai style furniture, heck some houses dont even have beds, some condos they sleep on rice mats. เตียงนอน ที่นอน were some of the central thai words used, but they just mean a place to sleep, not a description of what you are sleeping on. เฟอร์นิเจอร์, thai loan word for furniture, , โบราณ boran, ancient, so they finally settled on เฟอร์นิเจอร์โบราณ, but that just doesnt explain if there is a mattress or not. PS, forgot to mention, dont know what news channels your mrs watches, I watch them, at times they have to put up subtitles in pasat klang (central thai) so the thai viewers can understand what is being said.

Ps, above means pie chicken. she looked at it and said pie gai, so chicken pie i guess. what you are saying makes a lot of sense. i have tried to learn how to order certain foods how i like. i get three different answers for one. then i go about using all three figuring i will hit the jackpot at some point. none of them work, so i am left wondering wtf i did wrong. i tell one chicken guy all the time "ow luat" and i get home and it aint there. now, i am not saying it is his fault! maybe it is my tone or whatever. it is just extremely frustrating. i bring it up not even so i can learn it but just the point. it is so dang hard to nail down even one simple little thing. it brings back those memories of spanish. i swear on my mother there were times in spanish i heard people use slang words, i would use them and because it was me they would not understand. and that was a language i was good with. overall point is it is discouraging to get started. i just know for a fact there are so many frustrating bump ahead in the road i do not want to deal with, but i am getting to the point where i am willing to now. at least that is something.

tbv, you are already at an advantage over me, in speach patterns, eg noun adjective, in english its adjective noun.
You mentioned, ao luat, (I want the blood?) I assume you are buying fresh chicken at the local market, the girl is cutting it up for you, and you want her to toss the chicken blood in as well?
Tell her, and point at the blood at the same time, sai tung bai duay, it means put it in the bag to go as well.
I know your area, not all of those market stalls are native thais, some of them speak very little thai, up my way many of the staff in the gas stations are burmese, same same local wet markets.

That is another good point, sometimes my mind may get completely blown/frustrated because I am speaking to a Burmese man or woman who speaks very little Thai and I simply do not realize that.
Here is a new one. I am excited about this new style, sorta uncut "pseudo live" stuff. This was my first real stab at it and ran into a few technical snags but i think these are gonna get better and I will try to make them shorter...

Another point not mentioned, they well may be Thai, dont assume all Thais speak the same way all the time. You are dealing with vendors, they speak ภาษาตลาด, pasat talat, vendors language. Also many Thais buthcher their own central thai language, or speak what is known as LoSo Thai. Proper central Thai speakers will ask you, ทาน อาหาร แล้วหรือยัง, taan ahaan laew ru yang, have you eaten already or not, usual informal way of speaking, กิน ข้าวอยัง, gin khao yang, have you eaten. Informal speach. Q ไปไหน, bai nai, where are you going. A กับข้าว, gap khao, with rice (wtf?) Basically means I am going to the local vendors to buy food to take home. A layered language you will pick up as you go along, be aware, what you can use at the local market is totally unacceptable in formal situations.
