Many pasta recipes can be prepared with a minimum of fuss and enjoyed with maximum delight:
a) throw 6 cloves chopped garlic and a small chopped red chili into 1/4 cup hot olive oil for about 10 seconds b) immediately pour over cooked 250 grams of linguine (or any string-type pasta) c) add freshly ground black pepper and/or freshly grated parmesan to taste d) garnish with parsley and serve
substitute 100 grams of salted butter for olive oil for a nice change
You can't get faster prep time than that for such good eating...

Thanks CurtainwItcher, I'll give it a try.
One of my favourite pasta dishes is simple as well.
Fresh tomatoes and garlic simmered for a few minutes, add one or two anchovies.
When the pasta has about 2 minutes remaining I toss in broccoli and then drain and add the tomato sauce.
Lots of parm, it's also not bad as a pasta cold salad.

Comfort food means nothing to difficult or "peasant" food...not comfortable for the (lazy)cook....just kidding

Pray tell...Where would one buy a ham hock in Thailand? Or are we talking, pork hock? If you've got a decent fresh market near you, ask them if they can do the cut, but it will be pork hock straight off the pig and you'll have to cure it yourself or whatever they do with them. Villa and TOPS had both imported (NZ/Aus resp.) frozen Lamb Shanks and Pork Hocks but neither were that good or cheap. I've found the fresh counter at Foodland seems to have knowledgeable staff in general. I live in rural Thailand and I normally get my wife to order a whole hind leg of pork, bone in and skin on from the pork lady at the market. It has to be to order as Thais don't normally eat that cut. The last one cost me about 1,300 baht and was about 11kg in weight. After my wife deboned it it was about 8kg, I cut about 3kg off to make roast pork with crackling and made a ham with the rest. That takes about a week to cure and most of the day to cook. I usually cut it into 4 pieces and freeze 3 of them.

I know what your saying however for me 1000 baht a few years ago was okay for a pizza with the $£ so low it's now $40 or £21, I like my pizza and I find the frozen Waitrose at 169 baht plus a pack of Parma ham (209 baht) and fresh mozzarella (149 baht) equally as good, Pizza has become a home meal at home instead of a dining experience. See what happens when you get old and are on a pension Heheheh
