I tried to reply to this about 3 times last month but I gave up in the end. I will try again. I actually put another leg in to brine on Saturday so it should be ready at the end of this week. I also made some pork pies a couple of weeks ago. Where did you get the gelatine from Bill? I would like to have a go at the pork pie one. One piece I will turn into a Honey Mustard Glazed Smoked Gammon (Bacon) Joint and I asked SWMBO to order me 2 or 3 kg of belly pork which I will turn into bacon next week.
