here's another quick sauce I often prepare for my Thai spouse:
Lemon Linguine
500 gr linguine 2/3 cup good olive oil 2/3 cup freshly grated parmesan 1/2 cup fresh lemon juice (about 3 lemons) 1 tblspn lemon zest 1/3 cup chopped fresh basil (I use sweet basil, but Thai basil might work)
Cook the pasta (I recommend DeCecco brand) in salted water according to package directions and drain (reserve one cup of liquid). Meanwhile, mix well the oil, parmesan, and lemon juice. Toss the pasta with the lemon sauce and the reserved liquid (as needed). Season with salt and pepper, garnish with lemon zest and chopped basil.
Easy and delicious.

Pizza Dough: 1000 g flour 15 g yeast 300 ml water 300 ml beer(no smokie not for you-for the dough) 300 ml olive oil Same results do you think with rice bran oil ? It's our primary cooking oil.

Next week I have the 6 months inspection for my car...think this is one of the oils I shouldn't use for cooking....but if I look at some of the local vendors not sure about it....may I'll keep it...

1000Baht?....the bloody dough cost that after all the experimenting.... . I think the first successful one cost a grand total of 5400 baht.... Wait until you have fly in a pizza guru from Italy to satisfy your mates. I like lots of cheese btw and non of this vegetarian stuff (well maybe one slice) The Pizza....

I saw a pic....too dry....it needs to stretch a bit I think....maybe the tomato sauce needs to be closer to the edge? Over to you cc...... Attachment Deleted

Patsy's Carbonara (shall melt hearts and tummies) fed to friends and family for decades -
Ingredients
Lardons (bacon bits) Onion Garlic Cream Egg yellows Grated cheese (any sort) I use bits of cheese that lurk in the fridge. Otherwise use a hard cheese. Gruyere, or a cheddar.
Pasta - i use Penne. which is a large macaroni which supps up the sauce well.
Fry up your lardons, onions, and lots of garlic (this is not a first kiss recipe) let them cool. Cook your pasta.
Five minutes before your pasta is ready. Mix the cream and egg yellows and grated cheese and the lardon mixture together cold. You don't want your eggs to cook.
When the pasta is ready, put it in the pan with the rest and mix and mix and mix until you have a nice creamy cheesy sauce. Add more cream if necessary. Or more cheese or more anything. Lots of black pepper - no need for salt because the lardons are salty enough.
I guarantee this is the bestest.
The only time it went wrong was when the eggs sort of scrambled once.
What i like also about this simple but yummy recipe is you can also add tomatoes or chilli flakes or anything really.
Bon Appetit. Try it.
And you can also make it like a mac and cheese and bake it.
Eat with garlic bread and lots of nice red wine.
Also very nice heated up the next day!!

You can add a bit of white to the frying of the onions bit, but i don't think it needs it!!
You can also drink some wine whilst you are cooking. In fact, that's a good tip. There is no way i would cook without a glass of something beside me.

Pork Fillet with Morel mushrooms (or any mushrooms)
Ingredients
1 pork fillet mushrooms onions garlic cream bisto
Slice your fillet into 2 centimetre slices arrange them on a plate and season them with pepper and salt Fry them in a pan Take them out of the pan and put on a plate
Fry up the rest, add the cream and thicken with the bisto and add the pork bits
Serve with rice, and a bit of coriander sprinkled over the top.
I do like my fatty foods!!!
The Morell mushrooms are the best, they add a flavour which is lovely. But they are very expensive. I buy the dried ones and soak them in warm milk.
Don't forget the good wine.
And a large gin and tonic for the cook. Or two.
