I want to batter a fish fillet with panko. Would pan frying it to seal it up and then finishing it in the oven work? Or should I just forget the batter?

Just use a pan with plenty oil in it....works the same

another one I am aware of is you beat egg white with sugar until stiff add some vanilla and boil milk.now scoop some of the egg white mixture in the milk and wait until cooked...not bad actually...
