All of us know the situation that there are some things in the fridge (and for members with Thai partners on the table or somewhere else) and you just don't know what you can cook out of it... hence ask the crazy chef- easy recipes for daily use. i'll give it a start and post my yesterday's food: pork fillet thinly sliced white cabbage thinly slice onion thinly... ginger finely chopped brown mushrooms thi.... Cabbage,onion and mushrooms sautéed until golden brown than the pork added seasoned with dark soy sauce,fish sauce and oyster sauce and some water(I love sauce)finished with some chilli flakes and served with steamed rice for the Thai part of my family and fried potatoes for me...pretty nice and less than 15 min cooking time and not even 100thb for the three of us...

OK CC, first test for our resident Crazy Chef.
Part of my red cross Songkran survival pack included an order from Bunter's Foods. Amongst the remaining food in my freezer i have some English breakfast sausages and some lovely bacon, so I have decided to make the kids some 'pigs in a blanket' (PIAB). The problem that I have with this is that when I grew up in England we had never heard about PIAB (I think that it's American), so I have never had any experience with cooking them. I know that the recipe is simple, wrap the bacon around the sausage and shallow fry in Canola or Olive Oil (deep fry is too unhealthy), but I don't know how to join the bacon. The normal way to stick things together is by using duct tape but obviously I cannot use duct tape on this occasion (very bland) and super glue also appears to be out of the question. If I use cocktail sticks (toothpicks) I will not be able to shallow fry the PIAB, as the cocktail sticks would prevent the PIAB from cooking on the side where the cocktail stick sticks out.
Therefore, any tips on how to stick the bacon so that it does not fall off without using cocktail sticks?

You can use aluminium foil or a string which you afterwards remove...and if you have some cheese around cut the sausage lengthwise but just half stuff the cheese in and wrap the bacon around tie it with some small string and pan fry it. Next option would be American fried rice...kids love it...recipe available here

Thank you CC, I never thought of the string option. Also, the idea of using a cheese stuffing sounds great, I still have a lump of Shropshire Blue in the fridge. Gout City here I come.

Crazy Chef where can I get sausage casings ?
Any thoughts on a prawn/salmon sausage with some Thai herbs ? Or other winner recipes that will keep everyone happy ?
