Simple really, what won't you eat under any circumstances?
For me it's jelly fish because I am allergic to them. I have an adventurous palette so I will try anything once as long as it doesn't make me violently ill.
It has never occurred to me to eat rats ( seen them on a BBQ in the south of Thailand) as a sensible option. They could be sewer rats not field rats you never know. Over to you. What will you absolutely never put in your mouth or allow to touch your lips food wise?

With most foods you will never eat it's psychological. I mean if these were in a stir fry and I told you it was beef, you'd have no issues.

How sad about the jellyfish, I love them cooked at Jasmin's in Times Square (Bangkok not NY). The thing that I can't eat is Foie Gras, love the taste but within minutes of eating it I vomit.
Oh, and I would never eat som tam with pla ra in it.

When I have asked why I always get the same answer "I don't like the smell of beef". Saying that, I also know a lot of Thais who love a nice steak, which is why Chokchai and Sizzlers is popular here.

Jelly fish here comes in dried form in packets much like instant noodles. I break out in hives and have trouble breathing so can't eat them.
Foie gras is delicious but banned in some countries force fed geese. What has anybody tried that was adventurous? I had fubu fish in Osaka, it gives you a buzz from the toxins but I did wait half an hour for everyone else to dig in before I tried it. Fubu fish if it's not prepared by a specialized chef in this delicacy can kill you. Apparently your body begins to go numb from your extremities ( hands and feet) inwardly creeping whilst you are fully conscious. Horrible way to die.

Generally speaking for myself, I asses the desire to eat something on taste, smell and appearance..... which is a roundabout way of saying that if it still has its head on, I will not go near it.
But the one thing I seriously avoid is eggs, just the smell of a fried egg will make me projectile vomit.
