I'm cooking some sea bass fillets tonight. Give me a recipe then <duck>ers. FFS, never send a boy to do a mans job. Break out the tempura, toss the fish in it make sure to soak it well, then toss it into the deep fat frier, and the same time toss a pile of proper chips into the other side of the frier. While thats cooking, fire up the kettle, then make up some Chip Shop Curry Sauce. After kettlle has finished, top up and fire up a nice pot of tea. Alternativley you could do like the rest of us peasants do, head to the local market and ask for pla kapong sam rot, heck even Tesco and Big C will fry the effer for you.

This evening went to the local market, sober i might add.Bought a fish, forget its name, one introduced from Japan by the late king.Charcoal grilled, 60 baht. Needed some salad, lettuce and a couple of tomatoes, 15 baht. Have plenty of dried spices and olive oil. A veritable feast.

This evening went to the local market, sober i might add.Bought a fish, forget its name, one introduced from Japan by the late king.Charcoal grilled, 60 baht. Needed some salad, lettuce and a couple of tomatoes, 15 baht. Have plenty of dried spices and olive oil. A veritable feast. Pla Nim, introduced as a cheap souce of nutrition for the masses.

We eat fish charcoal grilled, not sure what they cost but they sure are nice with a bit of rice or salad. Can't remember the last time we cooked fish ourselves, might have been when I cooked up some mackerel steaks from Rimping a few years ago.
Nice way to cook fillets is to heat up some honey in a pan, not too hot or it will go black, and fry the fish like that. Gives it a nice flavour.
When we used to go sailing in QLD years ago we would overnight on these little islands, catch reef fish and cook them whole on the beach on hot coals. Put a peeled, ripe banana inside the whole fish wrapped in foil and cook it on the coals. If you do it right, it will be the best fish you ever tasted, you scurvy dogs ! Ahhhhhh !

Now come on soutie, you need at least two types of olive oil. Extra virgin is no good for frying. Refined is. Extra virgin for salads and adding to pasta once cooked.
